【英語】”Okonomiyaki” : 好みの具材のお好み焼きを、自分で焼いてみよう!

“Okonomiyaki” 「お好み焼き」  is a causal Japanese food cooked on an iron griddle. Its main ingredients are wheat flour, eggs, vegetables, meat and/or seafood.  A mixture of these ingredients is flattened and shaped into a round shaped and cooked similarly as pancakes on the iron griddle.
お好み焼きは鉄板の上で焼かれる日本の庶民的な料理です。主な材料は小麦粉、卵、野菜、肉、そして魚介。これらを良くかき混ぜたのち、平たく丸い形にし、パンケーキの場合と同じように鉄板で焼きます。

 

The word “Okonomi” means ‘your choice’ and “yaki” means cook or grill.  As this wording suggests, wide variety of styles of “Okonomiyaki” dish is available throughout the country – the famous ones, Kansai style and Hiroshima style.
お好み焼きという言葉が示すように、日本中で様々なスタイルが親しまれています。中でも主流なのが関西風と広島風お好み焼きです。

 

Kansai style “Okonomiyaki” is the most common, with the base made of wheat flour, eggs, and often “Nagaimo” (Chinese Yam). Typical ingredients such as shredded cabbage, green onion, pork,shrimps, and others such as “Mochi” and cheese are added to the base, mixed well and fried on both sides on an iron griddle.
関西風お好み焼きが最も多く、小麦粉、卵、そしてしばしば長芋を加えたベースに、典型的には刻んだキャベツ、ネギ、豚肉、タコ、エビ、また、もちやチーズなどを加え、良くかき混ぜた後に、両面を鉄板で焼きます。

 

When cooked, “Okonomiyaki” is sliced into smaller pieces on the iron griddle using the metal spatulas used for cooking, and served with your choice of toppings.  Typical toppings are thick and a bit sweet “Okonomiyaki” sauce, Japanese Mayonnaise, “Aonori” (shredded dry seaweed), “Katsuobushi” (bonito flakes), and “Beni Shoga” (pickkled ginger).
焼き終わったら金属のヘラで小さくスライスし、お好みのトッピングで頂きます。典型的には、濃厚でやや甘味のあるお好み焼きソース、日本のマヨネーズ、青のり、かつおぶし、紅ショウガなどです。

 

Hiroshima style “Okonomiyaki” is different, in which ingredients are not mixed but layered. Firstly,a thin layer of base ingredients is cooked on the iron griddle, then huge amount of shredded cabbage and sometimes “Yakisoba” (noodles) are put on top, and thereafter another layer of base is put on top.
広島風お好み焼きは異なり、具材は混ぜずに層に重ねます。鉄板の上に薄く延ばし生地に大量のキャベツと場合により焼きそばを載せ、さらに上に生地を重ね焼き上げます。
