“Hiyashi Chuka” is a cold Japanese dish with “Ramen” noodles and various toppings.  It is a very typical noodle dish served during the summer, throughout Japan and at homes.  “Hiyashi Chuka” literally means “chilled Chinese” but it is a Japan origin dish emerged about 80 years ago.

“Ramen” noodle is boiled and then cooled in ice cold water, and placed on a dish, usually not as deep as regular “Ramen” bowl.  Popular toppings include, egg crepe strips, cucumber, ham, and bean sprouts.  Others include, tomato, steamed chicken, and seaweed, etc…depending on restaurants or homes.

Toppings are usually stripped and placed neatly on top of the noodles, as seen in the picture. Soy sauce, vinegar, and sesame based cold dressing is poured over the noodles and toppings. It is also common to put some “Karashi” mustard as a supplement.

Please enjoy this healthy noodle dish during the summer!
