“Uni” is Sea Urchin, which is typically eaten fresh in Japan as “Sashimi”, “Sushi” topping, or “Uni-don” which is a bowl of cooked rice topped with fresh “Uni”, as seen in the first picture.
Good season for “Uni” is several months before the egg-laying periods, and is usually from spring to autumn, best during the summer, depending on each kind.
As in the first picture, “Uni-don” is usually served just with “Wasabi”, Japanese horse radish, and soy sauce, so as not to spoil the fresh flavor and taste of “Uni”
Freshness is very important for the taste, and therefore, when visiting its origin sea shore towns, you may encounter a restaurant, which offers you an opportunity to eat fresh “Uni” directly from its shell, like from the one seen in the second picture!!
